Red curry coconut noodles

We had a beautiful, sunny weekend here in the Pacific Northwest and while Nick was in Vegas for his bachelor party, I had a nice relaxing weekend hanging out with my family.

Over the weekend I realized I never did a blog post about it. And I wanted to because it is so good! I've been passing it along to so many people and I've already made it twice! And the leftovers are just as good the next day!

Mmmm! my boyfriend will be happy, he loves trying new recipes and usually they scare me. So i'll get him to make this so I can actually try it! haha
