I posted a picture of our Wednesday night dinner on Instagram (username: Carol701) and had a couple of friends ask me for the recipes so I thought I would pass them along!
Ina Garten's Roast Chicken from her How Easy Is That cookbook. Kale Salad with Butternut Squash and Almonds from Bon Appetit. With basic farro and wine on the side!
Another reason I love doing a whole chicken is making homemade stock afterwards. With a big enough pot and a little bit of time it's actually pretty easy!

i love the idea of a roasted chicken but never think it is a good week day meal but hm.. maybe there is a possibility! i also totally agree with you on homemade chicken stock

I love roasting chickens! I usually marinate it overnight and cook it the next day for dinner. I love to experiment with different herbs and spices. And then I freeze the leftover meat into small ziploc bags to be used for other meals! So easy!
I did the same recently, combining Jamie Oliver and Ina Garten's recipes. It makes the house smell amazing, and is something the kids will actually eat!!
This seriously looked so good on Instagram - and I'm a vegetarian! :) I love kale and am always looking for new ways to cook it. These pictures are amazing, girl!
